What you'll need

  • 1/2 scoop ETB Vanilla Whey Protein  (Grab a sample here!)
  • 2 tbsp coconut flour
  • 2 tbsp almond meal
  • 2 tsp truvia sugar baking blend
  • 2 tbsp liquid egg whites
  • 1 tbsp unsweetened applesauce
  • 1 tbsp unsweetened cashew/almond milk 
  • 2 tbsp unsweetened coconut flakes
  • 1 tbsp light butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp chopped walnut


  • Melt the butter and mix well with the rest of the ingredients
  • Spray a small bowl with cooking spray and place batter inside
  • Microwave for 1-3 mins

Instructions for the frosting

  • Melt the coconut oil and mix all ingredients together then frost the cake and sprinkle with more chopped walnuts.
