Blueberry Protein Muffin Recipe

Diet Protein Recipes Vanilla

What you'll need:

Blueberry Protein Muffin Recipe:

  • 1 scoop Vanilla ETB Whey Pure Isolate   (Grab a sample here!)
  • 1/4 cup blueberries
  • 1 tbsp flour
  • 3 tbsp egg mates
  • 1 tbsp light butter
  • 1 tbsp unsweetened applesauce
  • 2 tbsp Greek yogurt
  • 1-2 tbsp unsweetened cashew or almond milk
  • 1/4 tsp baking soda
  • 1/4 tsp butter extract
  • 3 packets truvia
  • dash of salt

Instructions for the Muffins

  • Mix together dry ingredients and wet ingredients separately then combine together.

Recipe for Crumble 

  • 1 tbsp flour
  • 1/2 tbsp walden farms blueberry sauce
  • 2 packets truvia

Instructions for the Crumble

  • Mix together and form crumbles to sprinkle on top of muffin.

Recipe for Blueberry Sauce:

  • 1/4 cup blueberries
  • 1 tsp chia seeds
  • 1-2 tbsp walden farms blueberry sauce.

Instructions for the Blueberry Sauce

  • Microwave blueberries for 30-45 seconds then add in the rest of the ingredients and allow it to set while muffin is baking.
  • Method: Line a small bowl with parchment paper and place batter inside.
  • Bake on 400 for 10 mins then take out and sprinkle the crumbles on top.
  • Bake back in the oven on 350 for 35-40 mins.
  • Eat warm with the blueberry sauce!

  • 46.5g carb (5 fiber)
  • 38g protein
  • 393 calories
