Coconut Blueberry Protein Loaf Recipe

Diet Protein Recipes Vanilla

What you'll need: 

For bread:

  • 1 scoop ETB Vanilla Pure Whey Isolate   (Grab a sample here!)
  • 2 tbsp coconut flour
  • 2 tbsp almond meal
  • 2 tbsp truvia baking blend
  • 1/2 tbsp coconut oil
  • 2 tbsp Greek yogurt
  • 2 tbsp unsweetened applesauce
  • 1/2 tsp coconut extract
  • 1 tbsp coconut flakes
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • dash of salt

Instructions for the Bread

  • Combine all the ingredients and mix well
  • Spray a small loaf pan with cooking spray and place batter in it
  • Bake on 350 for 20-25 mins

Recipe for Coconut Frosting

Instructions for the Coconut Frosting

  • Mix together and let set while bread is baking

Recipe for Blueberry Jam

  • 2 tbsp fresh or frozen blueberries
  • 1 tsp chia seeds
  • 1/2 tbsp walden farms blueberry sauce.

Instructions for the Blueberry Jam

  • Microwave blueberries for about 30 seconds then mix in the chia seeds and blueberry sauce.
  • Allow bread to cool completely before adding the toppings.
